Technical Overview
PROMITOR™ Soluble Corn Fiber is a soluble dietary fiber made from corn and available in powder and liquid form, giving it a wide range of applications. It is clear and virtually flavorless. It is unobtrusive in formulations and will not adversely affect the final taste and texture of your product.
Soluble Corn Fiber has many technical characteristics that make it easy to formulate with in comparison to other alternatives:
- It has good process and acid stability – for example, fiber content is not affected by pasteurization of beverages, including fruit drinks. This stability helps ensure that products made with Soluble Corn Fiber can be labeled as a “good” or ”excellent” source of fiber, throughout processing and shelf-life
- It is a humectant – sugar-like moisture retention occurs in baked products, helping to maximize product shelf-life
- It has similar colligative properties to corn syrup – Soluble Corn Fiber is ideal as a neutral-tasting bulking agent
- Dissolves completely and clearly – clear in color and flavor making it great for beverage applications
- Soluble at nearly all pH ranges – fiber content remains stable over long periods of exposure to low pH conditions (even at levels below pH 4.5)
- It has little to no sweetness – Soluble Corn Fiber can be used with high intensity sweeteners or in reduced-sugar products, and with Maillard browning properties it can give appealing color to the most savory of products
- It is “healthy” – Soluble Corn Fiber has been shown to be a prebiotic fiber and thus promotes digestive health, offering 70% total dietary fiber (AOAC 2001.03) and only 2 Kcal/g
- It allows for consumer-friendly ingredient declaration – Soluble Corn Fiber can be labeled as “soluble corn fiber”, “corn syrup” or “corn syrup solids” where appropriate according to legislation because it is made using traditional corn syrup techniques. This avoids confusing and unfamiliar scientific names that, based on our research, can prevent consumer trial and repeat purchasing.
