PROMITOR™ Resistant Starch

Technical Overview

PROMITOR™ Resistant Starch is a physically-modified RS3-recrystallized starch that provides prebiotic dietary fiber, in a powdered form. It is virtually flavorless and demonstrates superior heat and shear resistance, and is tolerant to manufacturing processes. This and its low water holding abilities, make it the perfect choice for easily adding high-fiber content to baked product formulations, without compromise to taste and texture. Resistant Starch also makes an excellent substitute for flour in cookie and cracker production.

Resistant Starch has many technical advantages, which make it an ideal way to add fiber content to your product range:

  • Superior thermal stability and shear resistance – Resistant Starch retains fiber content and structure at higher temperatures and is the most thermally stable on the market – retaining fiber to temperatures of 150oC
  • Low water-holding characteristics – Resistant Starch allows for good height and spread management in cookies and better dough handling in crackers or hot pressed tortillas
  • Reduced oil pickup – Resistant Starch reduces fat absorption in fried processes by as much as 25%
  • “Healthy” in its own right – Resistant Starch has been shown to have prebiotic fiber and thus provides digestive health, offering 58% total dietary fiber (AOAC 991.43) and only 1.7 Kcal/g
  • Label-friendly ingredient declaration – Resistant Starch can be labeled as “corn starch” in US, avoiding confusing and unfamiliar scientific names that may be off-putting for consumers
