Resistant Starch is suitable for a number of manufacturing processes, including sheeted snacks and cracker production. In this instance, Resistant Starch is an excellent ingredient because:
- Doughs remain pliable and cohesive throughout sheeting, and display very similar handling attributes to traditional cracker formulas;
- It can enhance light and crispy textures without perceivable grittiness, and may reduce baking times through its reduced water-holding characteristics. All of this is achieved while maintaining traditional cracker appearance;
- The fiber survives the shear of dough-mixing and the sheeting process, meaning that a 15-30% replacement of cereal flour can achieve a ‘good source’ or an ‘excellent source’ of dietary fiber per 30g serving of finished product. (US example).
